Things you should know:

You can only get five 虹彩矿石碎块 and one 虹彩矿石 per character per week. Resets with the normal weekly reset.
You can only get a certain amount of 虹彩矿石碎块, and the remaining number you can still get for the week can be seen in the profession window when selecting this entry (just called Iridescent Ore) under the section called Appendix I - Boundless Knowledge, it will show as the last line of text on the right. Resets with the normal weekly reset.
All nodes can drop the 虹彩矿石碎块, including elemental nodes, Titan-touched and Infuriated nodes.
虹彩矿石 is essentially the last 虹彩矿石碎块 you can get for the week. So when you get the 虹彩矿石, that means you will no longer get any 虹彩矿石碎块 or 虹彩矿石 on this character for this week.
Primal nodes drop the 元素注能之石.
Molten nodes drop the 加热的矿石样本.
Hardened nodes drop the 坚韧的大块岩石.
There appears to be no weekly limit on 元素注能之石, 加热的矿石样本 or 坚韧的大块岩石, though they have a significantly smaller drop chance compared to 虹彩矿石碎块 and likely do not drop from Titan-Touched, Infuriated, Rich and normal nodes.
元素注能之石, 加热的矿石样本 and 坚韧的大块岩石 all seem to share the same journal entry in the profession window, that being the entry for 元素注能之石.

Just like stated by EternalWulf, you can check in your tooltip for 虹彩矿石碎块 how many you can still gather per week.
However if you would like to have a look for yourself via scripts here they are, along with the 采矿巨龙论述

As of this post I have maxed mining and am still getting the ore fragments. I now have 2 knowledge points that I cannot spend on any specializations.

EDIT UPDATE: You can now trade the extra knowledge for 匠人之勇 with 制造者学徒 or 采集者学徒, who are standing about 20 yards east of the stairs leading up to the crafting orders platform at 37.34, 64.72 in Valdrakken. 10 knowledge for 25 mettle.
