The mounds can be very difficult to spot in the ground clutter. There is often a Cragbound Fox hanging around them.
Also, turning off the UI (alt-z) might make them 'sparkle', so they are easier to see.

Look for small dirt mounds on the ground around the area. You can also target them if necessary:

/tar Stoat Den

After rustling a den, few Faintstep Stoats spawn out and you have to kill the poor Mustela to loot Soft Stoat Pelt. You only have a few seconds to do this before the stoats disappear (AoE spells for ease). As usual, the quest item is not a guaranteed drop.

The Stoat Hunt is located in Tiragarde Sound Foxhollow Woods on Kul Tiras isle at 55.47 24.72.
To get Soft Stoat Pelt you have to dig in Stoat Den in the surrounding area, 2-3 Faintstep Stoat will appear from each den which you have to kill to collect pelts. Dens can be found near Cragbound Fox.

You will need to use your burst spells to kill these mobs before they disappear.

I wasn't killing them fast enough as an Affliction Warlock. Switched to Destro and was able to kill them in time.

There are small burrows on the ground, often near Cragbound Fox. Several small mobs will spawn out of the ground. Kill them but LOOT THEM IMMEDIATELY. they despawn very quickly, especially if you are attacking something else at the same time. Do not wait until after combat to loot.

So I pull everything, then click the mound but as soon as they die, they just disappear, ugh. I've done about 15 of them already.

I think the foxes eat them; as long as I clear all the foxes from around the mound first, I have enough time to kill the stoats and they don't disappear as fast.

The stoat disappear very quickly. Not worth it.

This quest is a pain until you know what to do:
1. Kill any close by mobs.
2. Kill the stoats one at a time and immediately loot them.

They seem to despawn quickly if you don't loot after killing one. Then the loot disappears.

I have been losing my mind on getting any of these items. After coming here and reading the comments, I discovered that if I targeted only ONE of the animals, I could get the loot off that one. Once you either kill ONE or loot ONE the rest disappear. Once I changed my strategy from trying to kill all three at once, I was able to get this to work and it only took a few minutes. Try it out!

Perfect example of quest I detest. To get five target loot items from a creature that has less than great drop rate- then to top of you have to kill 65 non target animals as they jump in the fray. Just a pain in the ass. I must have killed two dozen foxes.

These should have been side quests and not part of the main story. So stupid killing falcons and weasels.

This is an extremely difficult quest, but I would like to share some things that helped me.
- take a moment and clear the area of any boar or foxes that might attack while hunting stoats.
- Click on the tunnel pile. You have to stand there until the stoats come out, or it cancels.
- Once the stoats come out, you cannot waste a second.
- One exception about wasting a second. I moved back a few feet, to get a wider view. Sometimes it worked, and sometimes it does not.
- Click randomly close to the stoats until you target one. They move so quickly, this is largely luck.
-Once you target one, watch his energy level so you know the moment he is dead. While doing that, keep careful track of where he is, so you can go to his body immediately, without looking. You will clock out if you waste even a few seconds.
-Getting more than one stoat is not going to happen. Once you get the first one, harvest him, and go on to the next tunnel.
-Some tunnels do not reward with a pelt. Others are simply impossible to complete in time.

This quest is so much frustration and work, I tried to skip it, but got tired of having it in my "to do" file.

Use the following two macros, modified as necessary on the "zap" macro for your character's class (mine is an Elemental Shaman):

"tar"
/tar Stoat Den
/run SetRaidTarget("target", 4)

"zap"
/tar Faintstep Stoat
/run SetRaidTarget("target", 4)
/cast Lightning Bolt
/cast Lava Burst

Use "tar" to locate the den, click on the den, and then SPAM the "zap" macro.

NOTE: while AOE spells may simplify this for you, there is sufficient time to kill 3-4 stoats from each den by spamming the "zap" macro. OFC whether straight DPS or AOE, the use of ranged spells obviously is an advantage

This should not be a required quest. There's no way I'm doing this. I have morals.
If they wanted the meat or something I'd be okay with it but this is a blood sport, I won't stoop that low even if it is a game.

Description

One of the greatest hunting sports amongst the nobles of Boralus is the stoat hunt. It is a sport of determination, patience, and skill. Do you think you can rise to the challenge?

Stoats are agile, sneaky, and sharp. They're next to impossible to catch out in the forest, so the best way to find one is to find its burrow and scare it out.

Find their burrows and bring back their pelts. Their fur is soft and much loved amongst the nobles.
