A very nice fishing spot for these is in the Pools of Vision inside Wor'gol. While I was there several pools spawned, plus I was catching them about 50% of the time even without a pool or bait.

These fish are captured in pools or open water all over Frostfire ridge.
You must obtain 5 fish of each type (Small Fire Ammonite, Fire Ammonite, or Enormous Fire Ammonite) before you can right-click and "gut/clean" the fish to obtain a stack of Fire Ammonite Tentacle. You get varying amounts with each type of fish that is "gutted/cleaned":

5 Fire Ammonite Tentacle from a stack of 5 Small Fire Ammonite
10 Fire Ammonite Tentacle from a stack of 5 Fire Ammonite
20 Fire Ammonite Tentacle from a stack of 5 Enormous Fire Ammonite

Fire Ammonite Tentacle is the actual reagent, and is used in items such as Feast of the Waters, Fiery Calamari, Fire Ammonite Oil, and Pure Rage Potion.

As an alliance character doing Fire Ammonite, run to Rangari Veera at 87.4, 62.6 in Frostfire Ridge. You can grab the Flight Path so you don't have to make the run every time. There is also another further Flight Path, Brenna Skymoor. She is a neutral flight path, and much closer to high-concentration areas of the pools.

Fire Ammonite Angler Enormous Fire Ammonite
You can find these in the lava pools around the zone. You can use this macro to quickly combine all the fish from this zone. You won't have to search or click each fish with this macro.

One place I found that had these in was Hallvalor, in Nagrand. There is a lava pool where the rare spawns.
In this pool you can find the occasional Pool of Fire Ammonite. Additionally, there is a very high catch % of these when using the Fire Ammonite bait. I was able to keep fishing up bait before my last bait ran out, meaning I was able to catch Fire Ammonite indefinitely. It is a good spot for Alliance players when they don't want to have to traipse all the way to Frostfire Ridge.

For Alliance players doing the Fire Ammonite daily quest, check if the quest giver gave you a Fire Ammonite Bait. If you have a bait, you can fish the Fire Ammonite right there on the pound in garrison.

Ok, the description says it's a "magical fish that lives in lava"... But why do we catch regular fish from the same lava pools?

I had caught quite a few of them also going after the abyssals out in Arak for the daily and had thought to keep sitting on them instead of gutting them right away.

I find that the best place for Alliance characters to fish Fire Ammonite is actually in Frostwall, where the Horde garrison is. Since all the Horde phase out to their own Garrison, the whole place is empty and free of enemies. You can go up to the caves where their fishing shack usually is (coords 48,68), and just sit there for as long as you want without being bothered. There's even some lava you can fish out of if you get tired of regular water.

While you're in the area trying to catch these, there's a lagoon (Lagoon Pool) at 21.9, 9.6 (far northwest corner of Frostfire Ridge) that you can fish up a toy for your toy box. Giant Draenor Clam which contains Pretty Draenor Pearl .

I found an excellent place at Frostwall. A lava pool into a semi-cave. Coords 49.82, 71.08. No hordes (realm pvp 8 hordes / 2 allies, very important this point for an ally like me) and with a very good ratio to take "Fire Ammonite Angler". Here also i'd fished Tentacled Hat. Got the achieve in 25 minutes and that hilarious hat.

it can be tricky for alliance to find the path into this zone. Get into gorond, find the two elites fighting themselves, go east of them, (there is a path), continue up around to west southwest area, you should cross a rock bridge and then you will see the giant bones of something I cant remember the name of (it tells you on the screen), there is a pool just below.

If you don't feel like going all the way into Frostfire Ridge, you can fish these up in the tar pools along the path into FR from Gorgrond. I saw a Fire Ammonite School while I was there, too.

As of 6.1, cleaning of fish has gotten a LOT simpler. It now takes 5 fish to clean, no matter what size they are, and they now give a set amount of mats. Current yield is as follows, per 5 fish.

Enormous: Yields 20
Normal: Yields 10
Small: Yields 5

My favorite fishing spot is at 43.2, 47.9 in Frostfire Ridge.

With ~880 fishing (700 base + items) and bait, I have an almost 100% catch rate for Enormous fish at this spot.

If you're counting on fishing up lures of any type, remember that you won't get them from lava. Best to take some lures with you!

For those who are doing the Fire Ammonite Angler achievement and need to catch Enormous Fire Ammonite, the best place is around 36,38 (the small red lake on the map). There are several fish pools spawning and by using server hop addons you can gather them really fast.
I used "Cross Realm Assist" and caught 100 fish in 20-25 mins.
