I'd only replace these with the Bolstered Legplates - in which case I'd gem with Glimmering Monarch Topaz to still have the insane amount defense as before, take advantage of the +6 stamina bonus and the parry from the gem as a nice extra.

These pants are pretty much a must for all newly dinged tanks. Decent strength and stamina plus massive defence rating. Best part.. craftable! Easiest tanking legs to obtain. No rep or grinding required. Almost any blacksmith high enough level will have this pattern, making it easy to hire someone to make them for you. Or just pick them up from the AH.
