To capture a cart you need to change its color / owner.
So as Horde make a Blue colored cart turn Red and vice versa as Alliance.
You do not have to "score" the cart.

For THIS achievement (ONLY) you need to be present when the cart changes color to your faction. For ALL other achievements referring to "capture" you need to ALSO BE PRESENT at delivery.

As previous posters said, you have to capture it from the opposite faction to your own, but what they didn't say is that you also can cap it from neutral to your own faction, making it much easier if you are doing it in randoms.

If a cart spawns right after the battle is over and you're at the spawn point, you will still get credit. You only need to turn the cart for your faction to get a +1 for the achievement.
