I took the quest, but the guy doesn't show me any options to start the game.

EDIT: Turned out, I was stuck in the Racing game, and I had to leave the zone and come back to be able to lose the toll debuff and have the option to play anything else.

This Darkmoon Faire game is a fairly standard 'Simon Says' game where you are asked to repeat the pattern performed by the NPC. On easy difficulty there are three steps, on medium there are four steps, and on hard there are five steps. The number of steps remains the same throughout the dance on each difficulty. Unless you do the hard dance perfectly on the first try, you will be required to complete the dance multiple times in order to satisfy the quest requirements. As a result, this daily quest will take longer than most of the other dailies.

An 'Accolades' bar will fill up depending on your dance performance, and the percentage for each performance is calculated based on your performance and difficulty. There are three levels of difficulty, easy, medium, and hard, and a 'fail', 'pass', and 'perfect' condition within each difficulty that each award a different number of accolades. The exact percentages are listed below:

Hard (perfect score): 100%
Hard (pass): 50%
Medium (perfect score): 33%
Medium (pass): 25%
Easy (perfect score): 20%
Easy (pass): 17%
Fail (any difficulty): 10%

While it is quickest to simply complete a perfect run of the hard level for your daily quest, there are a number of achievements to be earnt that will require you to complete the dance multiple times on all difficulties:

First Dance
Successfully participate in the Darkmoon Faire Dance game.

Don't Stop Dancing
Successfully participate in 30 Darkmoon Faire Dance games.

You Got the Beat
Earn a perfect score on Easy once.

Feeling It
Earn a perfect score on Easy ten times.

What a Feeling
Earn a perfect score on Medium once.

Can't Stop the Feeling
Earn a perfect score on Medium ten times.

Make You Sweat
Earn a perfect score on Hard once.

Maniac on the Dance Floor
Earn a perfect score on Hard ten times.

Dancing Machine
Earn this when you complete the following achievements: Feeling It, Can't Stop the Feeling, Maniac on the Dance Floor. Rewards the Dance Dance Darkmoon item, a portable stage toy with a 30 minute cooldown.

I've found that the patterns are easier to remember if compared to the level of gear quality:

Chicken Dance

1 = Yellow/Orange, like Legendary gear, which is the best a player can obtain.

Power Spin

2 = Purple, like Epic quality gear, which is second best.

Fist Pump

3 = Blue, which is Rare quality gear, the third best in game.

I have made a weak aura helper that makes it easier to do this, especialy if you are planing to fast spam it just for achievement.

While the oponent is performing his dance moves, click the icons you see on the center of the screen.
When its your turn to perform. spam the center button that appears and that will execute the sequence you inputed.

I found this confusing and kept failing, until I realised that to get a decent score you have to space your moves evenly throughout the time allocated.

It also seemed to help if I hit the button for the first move the very instant your time starts.

It's worth selecting the "easy mode" the first time until you get the hang of it.

Another addon named LazyMachine, that don't require WeakAuras.
You put in the symbols when the NPC is dancing, so you don't have to remember them.

I accepted this quest and chose my difficulty while still mounted on the Rocketeer and my character showed up on stage wearing the racing helmet. I have submitted a screenshot.

Description

Simon says, "Are you ready to dance?" Step on in and show off your sweet moves, <class>. The rules are simple. Your opponent will perform a series of stylish moves, then you gotta match 'em. Earn enough accolades and then come back to ol' Simon. Just know that the more challenging the opponent, the more accolades you can earn. Simon says, "Are you up for the challenge?"
