Please note that when you select the trait or ability you want and press ok that you now can only chose between those three followers for that week, so don't do it to try and see what you would get like I did.

The first time You meet Lysa Serion, she offers a quest The Headhunter's Harvest. This quest lets You choose one of 3 followers, after You decide what trait or ability You need.
It seems You only get the quest once. Later when You come back to Lysa Serion every week she gives You follower recruitment options.
I wonder if traits/abilities of the followers she offers are totally random? Well, I'll try to track them:

If You want to counter "Timed Battle" ability, she offers Neve Axeblow / Hannya, Hester Blackember / Cheri, Bridgette Hicks / Motina
If You select "Epic Mount" trait, she offers Haomi, Seona Fireweaver / Awarri Blazecall, Yumanis Oakengrip / Maska

I'm pretty ok with the amount of customization in my garrison; I never wanted to place rugs and lamps. I did want racial buildings when there was a discussion on the subject, but as a member of the alliance, I think my garrison looks absolutely amazing as it is now. I like that the choice of buildings, racial guards, guild standards and followers make my garrison feel a bit unique and like my character's home.

When I heard about followers, I knew that I would want to put together a draenei team, for my own "roleplaying inside my head (and garrison)"-adventure. A good healthy mix of draenei from our timeline and the alternate one. Just imagine all the uncomfortable discussions in the tavern late at night... "Oh, you died in our timeline... No, not very heroically I'm afraid. A crazed elekk ran over the outhouse you were in."

However! Lysa Serion REFUSES to give me draenei followers! I have spoken with her about recruits over the last 4 weeks, but all she has come up with are night elves, dwarves, humans and gnomes! I love all of those races of course, they're my little alliance buddies! But I had this plan... So I'm seriously considering firing her useless butt.

Suggestions for the inn (I've submitted these in-game too):

Let us sort on race, or
Let us reject the selection, and come back the next day for three new alternatives

I can't even seem to get the Headhunter quest from her. Whenever I click on her all I get is her saying "I'll find the right person for the job." Does this mean I'm not a high enough level yet? I'm level 92.

I would like to know, if you select an option for her to recruit from but you don't select any of the three she has randomly generated do they reset next week or does the reset only happen once you have selected one of the three? (I ask this since I have so many followers deactivated that I don't want more low level followers sitting idle.)

How many followers is it possible to get from her? If it's indefinate then I would expect some strange names turning up by now.

In my opinion when you select a follower by trait pick the "regular" over the rare ones, unless you realy like the second trait (s)he got. And the reason is:
If you look at the list of followers you will see they have a default rarity level, so picking a "regular" one give you the chance that (s)he will get a good second trait, while on the rare one you already lost that chance. Furthermore the rare follower you skip might "come back" at inn later on with a better second trait.
