Thrust - Melee, 3,250 damage. On its own cooldown.

Shield-Breaker - 5-30 yards, 2,000 damage, removes 1 stack of Defend.

Charge - 5-25 yards, 8,500 damage, removes 1 stack of Defend.

Defend - 30% damage reduction, stacks up to 3 times.

Refresh Mount - Heals your mount completely.

Duel - Challenges another player to a duel.

The three quests are offered by NPCs of your race in your faction's tent. You will need to practice Thrust on Melee Targets, Shield-Breaker on Ranged Targets, and Shield-Breaker+Charge on Charge Targets.
Learning the Reins
Alliance/Horde
Practice your Thrust, Shield-Breaker and Charge abilities against the Target Dummies. Again!
Training in the Field
Alliance/Horde
Slay (almost) any 8 Scourge units in Icecrown. Credit is given for most of the Scourge's allies too (Vrykul, Cult of the Damned necromancers, etc).
A Worthy Weapon
Alliance/Horde
Collect 4x Winter Hyacinth from Winter Hyacinths, found around the dam between Icecrown and Crystalsong Forest. Offer the Hyacinths to the Maiden of Drak'Mar in the North-Eastern corner of Dragonblight.
Note: You can only get one of the "blade" quests each day - A Blade Fit For A Champion, A Worthy Weapon, or The Edge of Winter.
A Blade Fit For A Champion

Apply Warts-B-Gone Lip Balm before /kissing an unknown number of Lake Frogs, hoping that one of them will turn out to be the Maiden of Ashwood Lake. Remember to apply the balm before each kiss, or you may and will get Warts!!
Note: You can only get one of the "blade" quests each day - A Blade Fit For A Champion, A Worthy Weapon, or The Edge of Winter.
The Edge of Winter
Alliance/Horde
Slay Lord Everblaze for his Everburning Ember, before heading to the Maiden of Winter's Breath Lake and freeing her from her icy prison.
Note: You can only get one of the "blade" quests each day - A Blade Fit For A Champion, A Worthy Weapon, or The Edge of Winter.
Daily Rewards: Completing all three daily quests awards 5x Aspirant's Seal and 750 Reputation with The Silver Covenant/The Sunreavers.

The Grand Melee

The Valiant's Charge
Present 25x Valiant's Seal to your race's representative in your faction's tent to be be allowed to become Champion.
The Valint's Challenge
Talk to Squire Danny to summon, challenge and defeat an Argent Champion.
A Champion Rises
Talk to Justicar Mariel Trueheart to receive 10x Champion's Seal and an Argent Squire/Argent Gruntling.

Eadric the Pure
Talk to Eadric the Pure to unlock all of the Champion's daily quests.
Taking Battle To The Enemy
The final version of your Field Training. Slay 15 Scourge units in Icecrown and/or their agents.
Among the Champions
Defeat 4 Champions in the Ring of Champions.
Battle Before The Citadel
Slay a Boneguard Commander, 10 Boneguard Scouts and 5 Boneguard Lieutenants in the Court of Bones.
Threat From Above (3G)
Slay Chillmaw and her 3 Cultist Bombardiers.
Daily Rewards
Completing all 4 daily quests awards 5x Champion's Seal, and up to 4 Champion's Writs, which can be used to purchase Commendations worth 250 Reputation with any city you have become Champion with. Alternatively you can choose to receive a Champion's Purse with 10g and a chance for a Champion's Seal inside, instead of the Writ. You also get 250 Reputation with the Argent Crusade and The Silver Covenant/The Sunreavers

The Black Knight of...
Westfall?/Silverpine?
Obtain the Dusty Journal from a Dusty Journal in either Westfall or Silverpine Forest.
The Seer's Crystal
Obtain a Seer's Crystal from Unbound Seers in Crystalsong Forest.
The Stories Dead Men Tell
Use Seer's Crystal near Connall's Grave, Lorien's Grave, and Sir Wendell's Grave.
There's Something About the Squire
Obtain a Large Femur from Skeletal Woodcutters in Crystalsong Forest. Use the Femur to stun and loot Maloric to obtain Murderer's Toolkit.
The Black Knight's Orders
Use Enchanted Bridle to take control over the Black Knight's Gryphon. Fly to wherever it takes you and obtain Stolen Tournament Invitation and Black Knight's Orders.
Note: In order to proceed further ahead with the chain, you will need to complete A Champion Rises first.
The Black Knight's Fall
Talk to Squire Cavin to summon, challenge and defeat The Black Knight.

Once they've become champions, Death Knights are sent to Crok Scourgebane rather than Eadric the Pure for their daily quests. That's why we have four versions each of Taking Battle To The Enemy, Among the Champions, Battle Before The Citadel, and Death From Above in the database instead of just two. Two versions are for Alliance and Horde death knights, and the other two versions are for other Alliance and Horde characters.Comment by ArgentSunAh, touche...

I'm tempted to go for the mini-pets after that, but since they're BoE, I may just wait for them to show up on the AH at reasonable prices. Today (at least on the US servers) was the earliest people could have gotten the necessary 40 seals, and sure enough a few pets showed up on the Auction House. However, the minimum bid was 4.5k, which was just a little too rich for my blood.Comment by ArgentSunMy own server hasn't seen any pets in the AH yet, but I don't doubt the prices will be insane whenever they appear. I think I will go after the ground mounts first, and then the Hippogryph. There is slight probability that its price will be reduced with the next big patch, to make it more affordable. Either that, or more sources of Champion's Seals will become available. So far that makes Stormwind (I'm a human.) and Gnomeregan Exiles. Tomorrow I'll get the Mechanopeep. ^_^

For the benefit of anyone out there having trouble wining jousting matches. Here is my pattern, and it's served me pretty well so far:

Before you start, stack your shields to 3 (green). Then start the match. As the NPC runs off into position, you can still attack him, use this time to charge them, then, as your charge takes you farther, turn back towards them and toss a Shield Breaker as you run back. Refresh any shields you may have lost, and start melee-ing them. After a few seconds they will run off again, rinse and repeat. Using this method you can finish all 3 Valiant matches without hitting Refresh Mount, although it is a good idea as a precaution.
