Arms = PVP w/ 2H (Burst damage)
Fury = PVE w/ dual wield (Sustained damage)
Protection = PVE/Tanking w/ shield (nominal damage, high mitigation)
That's probably the optimal definition.
As far as the builds go, the wowwiki section for warriors is bloated & desperately needs to be re-written. There are probably 50 different variations there & they are all more or less stupid, minor changes or builds that aren't too practical.
The most notable builds, though include MS/Flurry, MS/TM, & Imp. MS+ER.

The extra damage gained from other Fury talents, such as Enrage, are icing on the cake. Usually one can only get 3 points in Flurry, choosing to take Second Wind over in Arms.

Being able to change stances without losing up to 66% of one's rage is incredible. An example of this would include being able to change from Battle stance to Berserker stance to use abilities such as Intercept. Other examples of abilities used in this fashion include: Disarm, Pummel, and Hamstring.

MS directly translates to a faster, higher damage output at a heavy price: it is throttled by rage. This additional rage cost is offset by the effects of Endless Rage. This build also typically includes Tactical Mastery, but it is the least common build.

On the first build...
I would recommend dropping one of two things: Booming Voice or Unbridled Wrath & taking 4 or 5 points into Commanding Presence. Also, Imp. Hamstring is not necessary, but even 1 point can be deducted from there (2/3 or 3/3 Imp. Hamstring is fine, but not typical).
On the second build...
Improved Cleave is not typically used & you're missing a few core talents, such as Imp. Berserker Stance. Remove talents such as Iron Will (it's for PVP) & place a single point into Imp. Whirlwind. The single point for Imp. WW will place it on cooldown with Bloodthirst, basically.
